It's hard to keep crab cakes from falling apart when you saute them, unless you add a lot of filler that ruins the flavor. I like this recipe from Serious Eats that has you freeze the cakes before cooking to help them retain their shape. Main thing is if you have decent crab meat, don't overwhelm it with too much bread crumb/seasoning.
